It's constantly lagging behind what's happening at the joint, where the heat is drained. Set the temperature. Wait until the temperature is stable. Ignore the display while you solder. ...

also, @markiteight, check your DSP settings when doing media conversion from AIFF->FLAC. I'm not sure if replay gain (or other DSP) is applied or not when converting. Have a check of that first. Is the phono stage in the Majik Kontrol the same as that found in the Exotik/Akurate? If so I can do a comparison of an Exotik with phono and a Linto.
